Day 2
WEll, I believe I am doing well. I had half a bag of crackers yesterday with my chili and had only 7 with my chili today. Other than that I didn't have any other Gluten products. Not unless one was in the chili I made yesterday. So far, no episodes of being sick. Although my leg spasms are killing me, which is a symptom of Celiac disease. As I have been reading, gluten can be in make-up, hair products and envelopes. WOW! So, even if I eat right I can still get gluten in other things. So, I will at least do the eating part, then start researching other things. You also have to be careful with cross contamination. I a lot to worry about for something, but if I do get sick I know the gluten came from somewhere. I will gradually start looking into the other non-food products and being more careful with cross contamination. The eating out will be the issue. Tomorrow I am in an all day meeting, which means lunch on my own. Where do I go eat? Last time I was so sick after lunch, so this time I will research before I go out. If I go to Wendy's I can get a plain baked potato. Sounds great! I will have to do some research for Chilli's and Applebee's I will have to be careful when I go out with everyone, I may just have to excuse myself and go alone and go to the market and get some fruit. Otherwise, it isn't as hard as I thought. I like my junk food and bread otherwise I would be 10 lbs. So, giving up the food isn't hard it is just trying to find food to eat that is hard. But, I like not feeling bad and I have had more energy today then I have had in a long time. I don't know if it is connected but I do feel better. I made the gluten free brownies and WOW they are good. Not as good as regular brownies, but it gives me the sugar need without being sick. I even had milk and didn't get sick. I always thought milk made me sick never thought about the brownies making me sick.
