Ham Kabobs

lb. cooked ham, cut into 1-inch cubes

(8-oz) can pineapple chunks in unsweetened juice, drained

cup red currant jelly

tablespoon prepared mustard

  1. Heat grill. Alternately thread ham, pineapple and tomatoes onto four 10-inch metal skewers. In small microwave-safe bowl, combine jelly and mustard. Microwave on HIGH for 1 to 2 minutes or until jelly melts. Stir to combine. Brush 3 to 4 tablespoons jelly mixture over kabobs.
  2. When ready to grill, place kabobs on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 12 minutes or until thoroughly heated, turning once. Serve with remaining jelly mixture.

Ingredient Substitutions
Use fresh pineapple chunks instead of canned chunks. You need twelve 1-inch pieces.
Ham from the deli or leftover from Sunday dinner can be used for these kabobs. At the deli, ask for 1-inch slices and cub them for kabobs.
Try plum or apple jelly in place of red currants.

(3-lb.) boneless cooked ham

(8-oz.) can crushed pineapple in unsweetened juice

cup firmly packed brown sugar

tablespoons orange marmalade

teaspoon prepared mustard

  1. Place ham in 3 1/2 to 5-quart slow cooker. Drain pineapple liquid from can into slow cooker; refrigerate pineapple. In small bowl, combine brown sugar, 1 tablespoon of the marmalade and mustard; mix well. Spread over ham.
  2. Cover; cook on Low setting for 6 to 8 hours.
  3. About 5 minutes before serving, remove ham from slow cooker; place on cutting board. Cut off enough ham to make 2 cups cubed; cover and refrigerate for Ham and Broccoli Soup p.29. Cover remaining ham to keep warm.
  4. In small microwave-safe bowl, combine pineapple and remaining 2 tablespoons orange marmalade; mix well. Microwave on High for 1 1/4 to 1 1/2 minutes or until thoroughly heated, stirring once halfway through cooking. Cut ham into slices. Serve ham with pineapple mixture.

boneless skinless chicken thighs (about 1 1/4 lb), cut into 1-inch cubes

cup jerk seasoning sauce
1
cup canned or fresh pineapple chunks
2
medium red bell peppers, each cut into 12 wedges
1/2
medium onion, cut into 12 wedges, separated into chunks

  1. In shallow glass or plastic dish or resealable food-storage plastic bag, mix chicken and 1/4 cup of the jerk sauce. Cover dish or seal bag; refrigerate 1 hour to marinate, stirring occasionally.
  2. Heat gas or charcoal grill. Drain chicken; discard marinade. On each of 6 (15-inch) metal skewers, thread chicken, pineapple, bell peppers and onion alternately, leaving space between each piece. Brush vegetables with remaining jerk sauce.
  3. Place kabobs on grill over medium heat. Cover grill; cook about 15 minutes or until chicken is no longer pink in center and vegetables are tender.

My Summer Challenge

Maybe I am crazy but I am going to try to use this summer to get in shape and lose some weight.  I just weighed myself and I am at 151 pounds (WOW) I have never weighed this much, not counting being pregnant.  My plan, I don't have one.  I am going to try to lay off pop and exercise everyday (cough) I said try.  I will weigh myself next Tuesday and see where I am at.  My plans for today is to do Zumba then hang out in the pool.  I may even do Zumba again tonight.

Perfect Grilled Chicken

1/2 cup KRAFT Sun Dried Tomato Vinaigrette Dressing
4 small  boneless skinless chicken breast halves (1 lb.)

Make It

HEAT grill to medium heat.
POUR dressing over chicken in shallow glass dish; turn to coat both sides of each breast. Refrigerate 5 min. Remove chicken from dressing; discard dressing.
GRILL chicken 5 to 7 min. on each side or until done (165°F).

Substitute
Prepare using KRAFT Zesty Italian Dressing.
COOKING KNOW-HOW
Set the timer in the kitchen for 5 min. on each side so you don't forget to turn the chicken. Don't overcook the chicken - grill just until the juices run clear.

Grill runs out of gas unexpectedly or it starts to rain? That's easy. Just place the chicken on a baking sheet and bake at 400°F for 20 min. or until done (165°F).

Fiesta Chicken Enchilades

What you need

1 small onion, chopped
1 clove  garlic, minced
1 lb. cooked boneless skinless chicken breasts, shredded
1 cup  TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa, divided
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 Tbsp.  chopped cilantro
1 tsp. ground cumin
1 cup  KRAFT Shredded Cheddar & Monterey Jack Cheeses, divided
flour tortillas (6 inch)

HEAT oven to 350°F.
HEAT large skillet spayed with cooking spray on medium heat. Add onions and garlic; cook and stir 2 min. Add chicken, 1/4 cup salsa, cream cheese, cilantro and cumin; mix well. Cook 5 min. or until heated through, stirring occasionally. Add 1/2 cup shredded cheese; mix well.
SPOON about 1/3 cup chicken mixture down center of each tortilla; roll up. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray; top with remaining salsa and shredded cheese.
BAKE 15 to 20 min. or until heated through.

1) What do you hope to gain from the Roller Derby Workout Challenge?

2) After reading the Nutritional Guidelines what seems like the biggest challenge?

No Coke, No Whiskey, No candy,  WOW  that will be hard I love my candy!!!  I know I can do it, I went 2 years with no coke and no drinking.  I know I can do it again.  I hope!

so I ordered this workout video.  I wonder how many of these things I have?  I don't really want to know how many this makes.  I just hope this works, well actually I just hope I do it.  8 weeks is not that long.  If I can get myself to do it, stay off pop for 8 weeks that will be an accomplishment in itself.  Now to actually do the workout? well it is only 2 times a week 50 min each time, plus a diet? no diet, but I will try my best to stay off pop, candy, sugar, everything else may be an issue.  I am picky and cannot eat wheat anyway.  We will see.  I am uses this instead of FB as my post spot.  I don't care about winning any prizes if I can lose weight or stop drinking pop that will be my prize, besides I don't need everyone seeing what I am doing.
