My Summer Challenge

Maybe I am crazy but I am going to try to use this summer to get in shape and lose some weight.  I just weighed myself and I am at 151 pounds (WOW) I have never weighed this much, not counting being pregnant.  My plan, I don't have one.  I am going to try to lay off pop and exercise everyday (cough) I said try.  I will weigh myself next Tuesday and see where I am at.  My plans for today is to do Zumba then hang out in the pool.  I may even do Zumba again tonight.

Perfect Grilled Chicken

1/2 cup KRAFT Sun Dried Tomato Vinaigrette Dressing
4 small  boneless skinless chicken breast halves (1 lb.)

Make It

HEAT grill to medium heat.
POUR dressing over chicken in shallow glass dish; turn to coat both sides of each breast. Refrigerate 5 min. Remove chicken from dressing; discard dressing.
GRILL chicken 5 to 7 min. on each side or until done (165°F).

Substitute
Prepare using KRAFT Zesty Italian Dressing.
COOKING KNOW-HOW
Set the timer in the kitchen for 5 min. on each side so you don't forget to turn the chicken. Don't overcook the chicken - grill just until the juices run clear.
USE YOUR OVEN
Grill runs out of gas unexpectedly or it starts to rain? That's easy. Just place the chicken on a baking sheet and bake at 400°F for 20 min. or until done (165°F).

Fiesta Chicken Enchilades

What you need

1 small onion, chopped
1 clove  garlic, minced
1 lb. cooked boneless skinless chicken breasts, shredded
1 cup  TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa, divided
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 Tbsp.  chopped cilantro
1 tsp. ground cumin
1 cup  KRAFT Shredded Cheddar & Monterey Jack Cheeses, divided
flour tortillas (6 inch)

make it

HEAT oven to 350°F.
HEAT large skillet spayed with cooking spray on medium heat. Add onions and garlic; cook and stir 2 min. Add chicken, 1/4 cup salsa, cream cheese, cilantro and cumin; mix well. Cook 5 min. or until heated through, stirring occasionally. Add 1/2 cup shredded cheese; mix well.
SPOON about 1/3 cup chicken mixture down center of each tortilla; roll up. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray; top with remaining salsa and shredded cheese.
BAKE 15 to 20 min. or until heated through.

get started

1) What do you hope to gain from the Roller Derby Workout Challenge?

2) After reading the Nutritional Guidelines what seems like the biggest challenge?

No Coke, No Whiskey, No candy,  WOW  that will be hard I love my candy!!!  I know I can do it, I went 2 years with no coke and no drinking.  I know I can do it again.  I hope!

so I ordered this workout video.  I wonder how many of these things I have?  I don't really want to know how many this makes.  I just hope this works, well actually I just hope I do it.  8 weeks is not that long.  If I can get myself to do it, stay off pop for 8 weeks that will be an accomplishment in itself.  Now to actually do the workout? well it is only 2 times a week 50 min each time, plus a diet? no diet, but I will try my best to stay off pop, candy, sugar, everything else may be an issue.  I am picky and cannot eat wheat anyway.  We will see.  I am uses this instead of FB as my post spot.  I don't care about winning any prizes if I can lose weight or stop drinking pop that will be my prize, besides I don't need everyone seeing what I am doing.

Books

Ok so last year my goal of 12 books was I thought possible, but not even close (4 books is all I did).  Now kids books I read thousands.  This year my goal is still going to be 12.  I think if I find good books, this shouldn't be an issue.  I have 3 books from last year that I really did want to read, but never did.  


My other goal has got to be lose weight, I am getting bigger and bigger.  I am hopefully going to weigh myself once a week, post it here and what I did that week to lose weight.  As of today Monday 12-27 I weigh 149.8 my goal by this time next year is 130.  I would like to be down to 125 but 130 would be great, actually 140 would be great.  my plan for this coming week is to lay off the sweets (candy) and only have 2 cokes a day.  Next week I will take it down to 1 coke a day then maybe every other day, until I am at no pop or just on weekends.  

Yellow Cake


Ingredients

  • 1 1/2 cups white rice flour
  • 3/4 cup tapioca flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 teaspoons baking powder
  • 1 teaspoon xanthan gum
  • 4 eggs
  • 1 1/4 cups white sugar
  • 2/3 cup mayonnaise
  • 1 cup milk
  • 2 teaspoons gluten-free vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and rice flour two 8 or 9 inch round cake pans.
  2. Mix the white rice flour, tapioca flour, salt, baking soda, baking powder and xanthan gum together and set aside.
  3. Mix the eggs, sugar, and mayonnaise until fluffy. Add the flour mixture, milk and vanilla and mix well. Spread batter into the prepared pans.
  4. Bake at 350 degrees F (175 degrees C) for 25 minutes. Cakes are done when they spring back when lightly touched or when a toothpick inserted near the center comes out clean. Let cool completely then frost, if desired.

Coconut Ice Cream


Ingredients

  • 1 cup milk
  • 1 (14 ounce) can cream of coconut
  • 1 1/2 cups heavy cream
  • 1 1/2 cups sweetened flaked coconut (optional)

Directions

  1. Combine the milk and cream of coconut in the container of a food processor or blender, and mix thoroughly. Stir in cream and flaked coconut.
  2. Pour into the container of an ice cream maker, and freeze according to the manufacturer's instructions.
